Bam-Bou is turning up the heat this summer by hosting a chilli festival in honour of the fiery ingredient, from July to the end of September.

Head Chef and self-confessed chilli addict and grower, Steve Gower, has created a chilli tasting platter accompanied by an extensive selection of homemade sauces, oils and powders, which guests can mix and match to create their own flavours and spice combinations.

Steve says: “Some would say that I’m slightly obsessed with chillis. I can’t deny it! Not only do they add a kick to any dish, they are amazingly good for you, and contain some of the highest levels of vitamin C of any fruit.

“The range and differing strengths on offer here at Bam-Bou proves that anyone can enjoy chillis. And one of my biggest joys is to see chilli novices slowly building up their enjoyment from mild to the stronger chillis.”

Available on Monday to Friday evenings and lunch time on Monday as well, the tasting plate features seven dishes that can be shared between two or enjoyed by one. Highlights include the Jalapeño popper with pork and lemongrass, grilled chopped prawn on sugar cane and yoghurt and mango smoothie with pistachio.

These can be paired with ghost pepper oil for a fruity and smoky flavour, or for a more fiery option, the Habanero chillis with garlic. Bam-Bou’s team of waiters have been fully versed on the different chillis and sauces on offer and will be happy to advise any hesitant customer.

Bam-Bou’s recently appointed Bar Manager, Ladislav Piljar, has created three equally thrilling cocktails all featuring chillis, to complement the special menu.

These include the Bloody Maria – a true classic with chilli-infused blanco tequila for extra heat; The Gower – named after Steve, this signature hot martini features pickled garlic and makes a great aperitif; and Carnival – a mild and fruity creation that refreshes the palette with Sagatiba Pura, lime, basil and pink grapefruit juice.
